2-3 Cup(s)
water (adjust for desired consistency)
1-2 Tablespoon(s)
tablespoons lemon juice or apple cider vinegar

Preparation:
Preparation time: <15 min.
- In a blender or food processor, combine the hemp seeds and water. Blend until you achieve a smooth and creamy consistency.
- Pour the mixture into a saucepan and gently heat it over low to medium heat. Stir occasionally to prevent sticking or burning.
- Once the mixture is heated, add lemon juice or apple cider vinegar. This will help curdle the hemp milk and give it a tangy flavor similar to traditional dairy curds.
- Continue heating the mixture for a few more minutes until you see curds starting to form. Sometimes you don’t even need lemon to see curds forming.
- Remove the saucepan from heat and let the curdled mixture cool slightly.
- Place a cheesecloth or nut milk bag over a bowl and pour the curdled mixture into it to strain out the liquid whey. Gently squeeze or press the curds to remove excess moisture.
- Transfer the strained hemp curds to a clean container. Add salt and other seasonings, if desired, to enhance the flavor.
- Allow the hemp curd to cool completely and refrigerate it for a few hours to firm up before using.
- Hemp curd can be used as a dairy-free replacement in various recipes such as salads, sandwiches, dips, spreads, and more. You can also experiment with different seasonings and herbs to customize the flavor to your liking.
- Please note that homemade hemp curd may have a slightly different texture and flavor from traditional tofu or dairy-based cheese. If you prefer a more commercial version, you may find pre-made hemp curd products in health food stores or online retailers.
