Ingredients:

not salted pistachios, finely chopped
½ Cup(s)
almond flour
¼ Cup(s)
pitted dates, soaked
¼ Teaspoon(s)
salt

raw macadamia or pecan nuts, soaked
½ Cup(s)
canned coconut milk
¼ Cup(s)
coconut oil melted
⅓ Cup(s)
pure maple or agave syrup
2 Tablespoon(s)
fresh lemon juice
1 Teaspoon(s)
vanilla bean powder
Handfull of loved wildberries or a tbsp of wildberry jam
Preparation:
Preparation time: 15-30 min.
- Soak the macadamia or pecan nuts in water for at least few hours, then drain and rinse.
- Prepare a loaf pan with parchment paper.
- Combine all of the filling ingredients in a high powered blender and blend for about 2 minutes until silky smooth. Scrape down the sides as necessary. Taste the mixture to ensure it is to your liking.
- Set several tbsps. Aside and mix with blended wild berries or wild berry jam.
- Add a small handful of pistachios to the food processor and pulse until coarsely chopped.
- Prepare the crust by adding pistachios, almond flour, salt, drained dates, and coconut oil to the bowl and pulse until well combined and nuts are finely chopped.
- Press mixture into the loaf pan evenly, tapping down the side edges with a spatula.
- Pour the filling into the prepared pan over the crust. Smooth out the top and tap the pan hard against the counter to release any air bubbles.
- Place in the freezer to set until completely firm.
- Place the wildberry mix in the freezer for about 10-20 min.
- Place a wildberry layer on top of a white layer.
- Make one more layer of pure berries in between if you like.
- Let everything thaw in the refrigerator for a few hours before serving or at room temperature for 15 minutes.
- Enjoy! You can make another layer with strawberries, blueberries, or any other berries of your choice!
