Preparation:
Preparation time: over 1h.
- Begin by preheating your oven to 225 degrees Fahrenheit (110°C). Line two baking sheets with parchment paper, ensuring they have raised edges.
- Lay the steak on a cutting board and grab a sharp knife. Cut the beef into 2-inch (5 cm)-wide strips by slicing across the grain. This method severs the tough, thin fibers visible on the steak's surface. For ideal results, ensure these strips are approximately ⅛-inch (0.3) thick. Slicing while the meat is partially frozen makes this task easier.
- Allow the meat strips to sit at room temperature for around 15 minutes. This time will let them defrost and become more flexible. Place the strips in a single layer on a cutting board, cover them with plastic wrap, and use a meat pounder to gently flatten their thickness.
- Transfer the beef strips to a spacious bowl. Add salt, pepper, and your chosen spices, then use your hands to toss the meat until it's fully coated with the seasonings.
- Lay the seasoned meat pieces on the prepared baking sheets, ensuring they aren't touching each other. Slide the baking sheets into the oven for about 3 hours. Midway through baking, rotate the positions of the baking sheets to ensure even cooking. The beef will turn brown and dry during this time, filling your space with a delightful aroma.
- Once baking is up, transfer the strips to a cooling rack placed over a tray or foil to catch any drips. Allow the beef to cool and dry for roughly 30 minutes before savoring. Any leftovers can be refrigerated. They're just as delightful straight from the fridge.
