large Portobello mushrooms
1 pound (450g)
ground beef, pork or turkey

small onion, finely chopped

tomato sauce or marinara sauce

Preparation:

Preparation time: 15-30 min.
  1. Preheat your oven to 375°F (190°C).
  2. Start by cleaning the Portobello mushrooms. Gently remove the stems and scrape out the gills using a spoon to create a hollow space for the stuffing. Be careful not to break the mushroom caps.
  3. If you want the faster version – brush the cleaned Portobello mushroom caps lightly with olive oil to help them brown while baking. Place the caps on a baking sheet lined with parchment paper or a lightly greased baking dish. Mix ground raw meat with chopped onion and garlic, add spices, spoon the meat mixture into the hollowed-out mushrooms, and press down gently to pack the stuffing in.
  4. Bake in the preheated oven for about 30 minutes, or until the mushrooms are tender and the stuffing is hot and bubbly.
  5. The longer version is: In a large skillet, heat a bit of olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent and fragrant, about 2-3 minutes.
  6. Add the ground meat to the skillet and cook until it's browned and fully cooked. Use a wooden spoon to break the meat into small pieces as it cooks. Drain any excess fat if necessary.
  7. Stir in chopped parsley, dried oregano, tomato sauce, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  8. Remove the skillet from the heat and let the mixture cool slightly.
  9. Spoon the meat mixture into the hollowed-out mushrooms, pressing down gently to pack the stuffing in.
  10. Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the stuffing is hot and bubbly. Add some vegan cheese at the end of baking (5 min.).
  11. If you'd like, garnish with fresh basil leaves before serving.
