I love this recipe, found it in Steven Gundry’s book “The Plant Paradox”. It’s fast, easy to make, and an excellent alternative to fatty flour pancakes. My kids love them, too!

Ingredients:
Number of portions: 4

Large banana
4
Large free range eggs
2 Teaspoon(s)
Vanilla extract
4-5 Tablespoon(s)
Coconut oil, divided in two parts
Some
Plant sugar, agave syrup or honey (optional)
Pinch(es)
Salt
1/2 Teaspoon(s)
Baking soda or powder
Preparation:
Preparation time: 15-30 min.
- Mash banana with a fork
- Add eggs and whisk everything together
- Add vanilla extract, 3 tbsp. of melted coconut oil, sugar, salt and baking soda.
- Stir everything with fork or mix with a blender (for me the fork works well)
- Heat the pan, add one tbsp. of coconut oil.
- Set the heat to medium. Form pancakes - they get ready fast, therefore keep an eye on them.
- Flip the pancakes, fry on the other side.
- Enjoy!
