This red cabbage stew is hearty and comforting, perfect for a cozy meal on a chilly day. And so easy to make – you can’t fail! It’s a healthy option without meat, too. Feel free to adjust the seasoning or add other vegetables or herbs (or meat :D) based on your preferences. Enjoy!

of cabbage, chopped

carrots, diced and fried until golden

(14-ounce) diced tomatoes (or whole tomatoes crushed by hand)

vegetable broth

1 Teaspoon(s)
paprika
1 Teaspoon(s)
dried thyme
Salt and pepper to taste
Optional: Red pepper flakes for heat
Preparation:
Preparation time: 15-30 min.
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
- Stir in the chopped cabbage and fried diced carrots. Sauté for about 5-7 minutes or until the cabbage begins to soften.
- Add the canned tomatoes with their juices to the pot, along with paprika, dried thyme, salt, and pepper. If you want some heat, you can add red pepper flakes at this stage. Stir everything together.
- Pour in the vegetable broth, ensuring it covers the ingredients in the pot. Bring the stew to a boil.
- Once it starts boiling, reduce the heat to low, cover the pot with a lid, and let the stew simmer for about 20-25 minutes or until the cabbage is tender, stirring occasionally.
- Taste and adjust seasoning if needed.
- Once the cabbage is cooked to your desired tenderness, remove the pot from the heat.
- Serve the cabbage stew hot, garnished with chopped fresh parsley or cilantro if desired.
