Ingredients:
Number of portions: 4
1
pound (about 450g) large shrimp, peeled and deveined
8
oz (about 225g) linguine or your favorite pasta
4 Tablespoon(s)
unsalted vegan butter
4 Clove(s)
garlic, minced
1/2 Cup(s)
chicken broth
1/4 Cup(s)
dry white wine (optional)
Juice of 1 lemon
Red pepper flakes (optional, for heat)
Salt and black pepper to taste
Chopped fresh parsley for garnish
Preparation:
Preparation time: 15-30 min.
- Prepare Pasta: Cook the linguine or pasta according to the package instructions. Drain and set aside
- Cook Shrimp: Season the shrimp with salt and black pepper. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until they turn pink. Remove shrimp from the skillet and set aside.
- Make Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant.
- Deglaze with Liquids: Pour in chicken broth and white wine (if using), scraping any browned bits from the bottom of the pan. Allow the mixture to simmer for 2-3 minutes to reduce slightly.
- Combine Pasta and Shrimp: Return the cooked shrimp to the skillet. Add the cooked pasta to the skillet and toss everything together.
- Finish and Serve: Drizzle lemon juice over the dish and sprinkle red pepper flakes for a touch of heat. Garnish with chopped fresh parsley and, if desired, grated Parmesan cheese. Serve the Garlic Butter Shrimp Scampi hot, with extra lemon wedges on the side.
