Preparation:
Preparation time: <15 min.
- Preheat your oven to 180°C (350°F).
- Prepare the fruit filling:
- Chop the apple into large chunks and place in a saucepan.
- Cut the rhubarb into 5cm (2 in) pieces and add to the apples.
- Sprinkle with lemon juice and cinnamon.
- Cook the fruit mixture on the stove for 10-15 minutes, or until the apple has softened.
- While the fruit cooks, make the crumble topping:
- In a bowl, combine almond flour, coconut flour, honey, cinnamon, and coconut oil.
- Use your fingers to mix until the mixture becomes crumbly.
- Assemble the crumble:
- Transfer the cooked fruit to a greased 8x8-inch (20x20cm) deep baking dish.
- Evenly spread the crumble topping over the fruit.
- Bake in the preheated oven for 15-20 minutes, or until the top is golden brown.
- Allow to cool slightly before serving. Enjoy warm!
