6
large eggs
1/4 Cup(s)
coconut or nut milk
Acc. to taste
salt and pepper
1/2 Cup(s)
cooked and crumbled bacon (about 6-8 slices)
1/4 Cup(s)
diced bell peppers (any color)
1/4 Cup(s)
diced onions
Cooking spray or butter for greasing the muffin tin
Preparation:
Preparation time: 15-30 min.
- Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray.
- In a mixing bowl, crack the eggs and whisk them together with the milk. Season with a pinch of salt and pepper.
- Stir in the cooked and crumbled bacon, diced bell peppers, and diced onions. Mix until all the ingredients are well combined.
- Using a ladle or a measuring cup, pour the egg mixture into the greased muffin tin, filling each cup about 2/3 to 3/4 full.
- Bake in the preheated oven for approximately 15-20 minutes, or until the egg muffins are set and the tops are slightly golden.
- Carefully remove the muffin tin from the oven and allow the egg muffins to cool for a few minutes before removing them from the tin. Use a butter knife or a fork to gently loosen the edges and pop the muffins out.
- Serve the egg muffins with bacon warm, either as a tasty breakfast or a convenient snack.
