Ingredients:

Number of portions: 6
1/2 Cup(s)
dates
1/4 Cup(s)
raisins
1/4
dried pineapple
1 Cup(s)
walnuts or almonds
1/4 Cup(s)
shredded carrots
2 Teaspoon(s)
coconut oil
1/4 Cup(s)
shredded coconut
1/4 Teaspoon(s)
cinnamon
1/8 Teaspoon(s)
salt

Preparation:

Preparation time: <15 min.
  1. Mix the ingredients in a food processor until finely chopped. If your dried fruits are hard, soak in a little warm water for 5-10 minutes before processing.
  2. Then, shape into bars or balls. You can put them in a silicone mold and refrigerate for a couple of hours until firm. Then, all you have to do is pop them out.
  3. Note: you can add a teaspoon or 2 of coconut flour, if the mixture seems too wet.
  4. The bars will be good in the fridge for 3+ weeks. In the freezer for months. At room temperature probably only 3 or 4 days.
