Ingredients:

Number of portions: 4
1
large celeriac root
2 Tablespoon(s)
olive oil
1 Tablespoon(s)
Dijon mustard
1 Tablespoon(s)
maple syrup or agave nectar (skip in WF Spring)
1 Clove(s)
garlic, minced
1 Teaspoon(s)
soy sauce
Salt and black pepper to taste

Preparation:

Preparation time: 15-30 min.
  1. Prepare the celeriac: Peel the celeriac and cut it into 1-inch thick "steaks."
  2. Marinate: In a bowl, whisk together the olive oil, mustard, maple syrup, garlic, and soy sauce. Season with salt and pepper. Brush the marinade generously over both sides of the celeriac steaks.
  3. Roast: Preheat your oven to 400°F (200°C). Place the celeriac steaks on a baking sheet lined with parchment paper. Roast for 25 minutes, then flip and roast for another 15-20 minutes, or until tender and golden brown.
  4. Serve: Serve the celeriac steaks hot with your favorite sides. They pair well with mashed potatoes, roasted vegetables, or a simple salad.
