salted codfish, soaked and desalted (or 2 pounds/ 900 g of unsalted fresh)

Preparation:
Preparation time: 30-60 min.
- Start by desalting the codfish: Soak the salted codfish in cold water for at least 24 hours, changing the water 2-3 times. This will remove excess salt. After desalting, cut the codfish into bite-sized pieces.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for a few minutes until they become translucent and fragrant.
- Add the carrot, celery, and leek to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
- Stir in the diced tomatoes and cook for another 5 minutes, allowing the flavors to meld.
- Pour in the fish or vegetable broth and add the bay leaf and dried oregano. Bring the mixture to a boil, then reduce the heat to a simmer, cover the pot, and let it cook for about 15 minutes.
- Add the desalted codfish pieces to the pot. Simmer for an additional 10-15 minutes or until the codfish is tender and flakes easily.
- Season the soup with salt and black pepper to taste.
- Serve the Cod Fish Soup hot, garnished with chopped fresh parsley.
