When I have some leftovers after a party, e.g., green olives, I throw them into my scrambled eggs – it tastes utterly different! And while I love eggplant, this time that was it – olives and eggplant, scrambled eggs on top. Enjoy!

Eggplant, thinly sliced

Green olives, sliced

Salt and pepper
A little bit of olive oil
Preparation:
Preparation time: <15 min.
- Fry the eggplant on a dry pan. Be careful, it burns fast. Flip over in around 1 minute.
- Drizzle with olive oil, add some salt on top
- Whisk the eggs
- Pour the eggs on the eggplant.
- Add green olives on top
- Cook for 1 min., flip everything on the other side. Voila, your meal is ready!
