Delicious scrambled eggs with green olives and eggplant

When I have some leftovers after a party, e.g., green olives, I throw them into my scrambled eggs – it tastes utterly different! And while I love eggplant, this time that was it – olives and eggplant, scrambled eggs on top. Enjoy!

Ingredients:

Eggplant, thinly sliced
1 Handful(s)
Green olives, sliced

Eggs
Pinch(es)
Salt and pepper
A little bit of olive oil

Preparation:

Preparation time: <15 min.
  1. Fry the eggplant on a dry pan. Be careful, it burns fast. Flip over in around 1 minute.
  2. Drizzle with olive oil, add some salt on top
  3. Whisk the eggs
  4. Pour the eggs on the eggplant.
  5. Add green olives on top
  6. Cook for 1 min., flip everything on the other side. Voila, your meal is ready!
