These muffins are easy and fast to make and contain no flour. Healthy treat or fast breakfast option – my kids love them! I took this recipe from Dr. Gundry’s book.

Ingredients:

1 Tablespoon(s)
melted olive oil
1 Tablespoon(s)
olive or macadamia oil
1 Tablespoon(s)
coconut flour
1 Tablespoon(s)
almond flour
1/2 Teaspoon(s)
baking powder without aluminum
Pinch(es)
salt
2 Teaspoon(s)
sweetener
1 Tablespoon(s)
water
1
large egg

Preparation:

Preparation time: <15 min.
  1. Mix everything well with a fork or spatula. Let the dough stand for a minute. Distribute the dough in 4 silicone or paper muffin forms and place into the microwave. Cook for 1.5 minutes at the highest power.
  2. Get the muffins out from the microwave – add berries, jam, banana, or other supplements of your preference. Enjoy!
