- Begin by preparing the green vegetables. You can cut them into pieces or leave them whole, depending on your preference. Ensure they are clean and dry.
- In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic cloves and sauté for about a minute or until they start to turn golden and release their aroma.
- Add the green vegetables to the skillet. Cook them, stirring frequently, until they become tender but still crisp, which should take about 5-7 minutes. You can parboil thicker leaves for a couple of minutes.
- During cooking, you can add a pinch of salt and black pepper to taste. You can grate lemon zest for freshness and squeeze some lemon juice over the vegetables if desired.
- Transfer the vegetables to a serving plate once the vegetables are cooked.
- If you like, sprinkle grated Parmesan/ vegan cheese over the vegetables before serving.
