Preparation:
Preparation time: 15-30 min.
- Prepare Dutch Oven: Heat a Dutch oven over medium-high heat.
- Add Olive Oil: Pour in the olive oil and heat it until it shimmers.
- Saute Onions: Add the onions to the heated oil and sauté them until they become translucent. Be cautious not to brown them; this should take about five minutes.
- Add Garlic: Once the onions are translucent, add the garlic cloves. Saute and continuously stir until the garlic becomes fragrant, which usually takes about 1 minute.
- Incorporate Tomatoes and Seasonings: Pour in the tomatoes along with their juices. Add the salt, basil, and parsley to the mixture. Stir everything thoroughly. Place the bay leaf on top of the mixture.
- Bring to a Simmer: Increase the heat to high and allow the liquid to come to a simmer. Once it starts simmering, adjust the heat to medium-low or low to maintain a consistent simmer with slow, large bubbles.
- Cover and Simmer: Cover the Dutch oven and let the mixture simmer for at least 20 minutes. Stir occasionally during this time. The tomatoes should deepen in color as they cook.
- Turn off Heat: Once the cooking time is completed, turn off the heat.
- Finish with Extra Virgin Olive Oil and Blend: Drizzle the sauce with extra virgin olive oil. Then, using an immersion blender, puree the sauce until it reaches your desired consistency.
