Wooden skewers, soaked in water for 30 minutes
Preparation:
Preparation time: 15-30 min.
- In a bowl, mix teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger to create the marinade.
- Cut the cod fillets into 1-inch cubes, ensuring all seafood is cleaned and prepared.
- Place the cod, shrimp, scallops, bell pepper, red onion, and zucchini in a large bowl. Pour half of the teriyaki marinade over the seafood and vegetables, ensuring they are well coated. Marinate for at least 30 minutes.
- Preheat the grill or grill pan or oven over medium-high heat.
- Thread the marinated cod, shrimp, scallops, bell pepper, red onion, and zucchini onto the soaked wooden skewers, alternating between the ingredients.
- Brush the skewers with vegetable oil to prevent sticking on the grill.
- Grill the skewers for 4-5 minutes on each side or until the seafood is cooked through and has a nice char; around 20 minutes in the oven.
- While grilling, heat the remaining teriyaki marinade in a small saucepan until it simmers and slightly thickens.
- Once the skewers are cooked, brush them with the heated teriyaki sauce.
- Serve the Cod and Seafood Skewers over steamed rice or with your favorite side dishes. Garnish with chopped green onions and sesame seeds if desired.
