Preparation:
Preparation time: 15-30 min.
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the diced sweet potatoes with 2 tablespoons of olive oil, minced garlic, smoked paprika, dried thyme, salt, and pepper. Toss the sweet potatoes until evenly coated with the seasoning mixture.
- Spread the seasoned sweet potato cubes in a single layer on a parchment-lined or lightly greased baking sheet.
- Place the salmon fillets on the baking sheet alongside the sweet potatoes. Arrange them skin-side down if using skin-on fillets.
- In a small bowl, mix together the remaining 1 tablespoon of olive oil and honey. Drizzle or brush this mixture over the salmon fillets.
- Season the salmon with salt and pepper according to your taste.
- Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the sweet potatoes are tender and lightly golden.
- Once done, remove the baking sheet from the oven and let it rest for a couple of minutes.
- Garnish with fresh parsley if desired, and serve the oven-baked salmon and sweet potatoes hot.
