2 to 2.5 pounds (about 1 to 1.1 kg)
pork loin roast

dried thyme (or 1 tablespoon fresh thyme leaves)

dried rosemary (or 1 tablespoon fresh rosemary leaves)
For the Chanterelle Sauce:
8 ounces (about 225g)
fresh chanterelle mushrooms, cleaned and sliced
2 Tablespoon(s)
vegan butter

small onion, finely chopped

garlic, minced

coconut cream or several tbsp. of coco sourcream

fresh parsley, chopped, for garnish

Preparation:

Preparation time: 30-60 min.
  1. Prepare the Pork Roast: Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, minced garlic, dried thyme, and dried rosemary. If using fresh herbs, chop them finely and add them to the mixture.
  3. Season the pork roast with salt and black pepper. Rub the herb and garlic mixture evenly over the surface of the pork.
  4. Heat a large ovenproof skillet or pan over medium-high heat. Once hot, add a bit of olive oil to prevent sticking. Sear the pork roast on all sides until it develops a nice brown crust.
  5. Transfer the skillet with the pork roast to the preheated oven. Roast for about 20-25 minutes per pound (about 45-55 minutes for a 2 to 2.5-pound roast) or until the internal temperature reaches 145°F (63°C) for medium-rare. Adjust the cooking time if you prefer a different level of doneness.
  6. Remove the pork roast from the oven and let it rest for about 10 minutes before slicing.
  7. Prepare the Chanterelle Sauce: While the pork is roasting, prepare the chanterelle sauce.
  8. In a large skillet or pan, melt the butter over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
  9. Add the minced garlic and sliced chanterelle mushrooms to the skillet. Cook for another 5-7 minutes, or until the mushrooms have softened and released their moisture.
  10. Stir in the coconut cream and continue to simmer until the sauce thickens, about 5-7 minutes. Season with salt and black pepper to taste.
  11. Serve: Slice the rested pork roast into medallions or thick slices.
  12. Pour the chanterelle sauce over the sliced pork.
  13. Garnish with chopped fresh parsley.
  14. Serve your pork roast with chanterelle sauce hot, accompanied by your choice of side dishes, such as mashed sweet potatoes, roasted vegetables, or a green salad.
