large Portobello mushrooms
1 pound (450g)
ground beef, pork or turkey

small onion, finely chopped

Preparation:
Preparation time: 15-30 min.
- Preheat your oven to 375°F (190°C).
- Start by cleaning the Portobello mushrooms. Gently remove the stems and scrape out the gills using a spoon to create a hollow space for the stuffing. Be careful not to break the mushroom caps.
- If you want the faster version – brush the cleaned Portobello mushroom caps lightly with olive oil to help them brown while baking. Place the caps on a baking sheet lined with parchment paper or a lightly greased baking dish. Mix ground raw meat with chopped onion and garlic, add spices, spoon the meat mixture into the hollowed-out mushrooms, and press down gently to pack the stuffing in.
- Bake in the preheated oven for about 30 minutes, or until the mushrooms are tender and the stuffing is hot and bubbly.
- The longer version is: In a large skillet, heat a bit of olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent and fragrant, about 2-3 minutes.
- Add the ground meat to the skillet and cook until it's browned and fully cooked. Use a wooden spoon to break the meat into small pieces as it cooks. Drain any excess fat if necessary.
- Stir in chopped parsley, dried oregano, tomato sauce, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Remove the skillet from the heat and let the mixture cool slightly.
- Spoon the meat mixture into the hollowed-out mushrooms, pressing down gently to pack the stuffing in.
- Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the stuffing is hot and bubbly. Add some vegan cheese at the end of baking (5 min.).
- If you'd like, garnish with fresh basil leaves before serving.
