Ingredients:

olive oil

head of cauliflower

small zucchinis
1
eggplant (optional)
1 Can(s)
red beans (no sugar added)
Tablespoon(s)
curry paste or other favorite herbs and seasoning
If you have, you can add leftovers of steak or chicken, cut into small pieces.

Preparation:

Preparation time: 30-60 min.
  1. Heat the oil in a frying pan over medium heat.
  2. Cut cauliflower into 3 cm pieces, and add to the frying pan.
  3. Cut zucchini into straws, add to the pan with the cauliflower.
  4. Add half of a cup of water, allow to boil; add curry paste or other seasonings, salt, cover the pan and leave vegetables for 3 minutes to stew.
  5. Add red beans without water.
  6. Mix everything well, add leftovers of meat (optional) and allow everything to settle for another 3-5 minutes.
  7. You can eat the stew with celery fries but it’s good on its own, too.
