medium or 1 large zucchinis
1 pound (~500g)
ground beef, pork, turkey, chicken, or your choice of minced meat
1
onion, finely chopped
2 Clove(s)
garlic, minced
0,5 Teaspoon(s)
dried oregano
0,5 Teaspoon(s)
dried basil
Acc. to taste
salt and pepper
Chopped fresh parsley or basil for garnish
Preparation:
Preparation time: 30-60 min.
- Preheat your oven to 375°F (190°C).
- Wash the zucchinis and trim off the ends. Cut them in half lengthwise or in round pieces crosswise if zucchini is large, and then scoop out the inner flesh, leaving about 1 inch (2.5cm) border around the edges.
- Add the chopped onion and minced garlic to the ground meat, season with salt, pepper, and herbs. Mix everything well.
- Place the hollowed-out zucchini halves in a baking dish. Spoon the meat and vegetable mixture into the zucchini halves, filling them generously.
- Cover the baking dish with aluminum foil and bake in the oven for about 40-50 minutes, or until the zucchinis are tender and the meat is cooked.
- Remove the foil and bake for an additional 5 minutes.
- Once cooked, remove from the oven and let the zucchinis cool slightly.
- Garnish with chopped fresh parsley or basil before serving.
- Serve the stuffed zucchinis as a main dish with a side salad.
