Preparation:

Preparation time: 15-30 min.
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced sweet potatoes with 2 tablespoons of olive oil, minced garlic, smoked paprika, dried thyme, salt, and pepper. Toss the sweet potatoes until evenly coated with the seasoning mixture.
  3. Spread the seasoned sweet potato cubes in a single layer on a parchment-lined or lightly greased baking sheet.
  4. Place the salmon fillets on the baking sheet alongside the sweet potatoes. Arrange them skin-side down if using skin-on fillets.
  5. In a small bowl, mix together the remaining 1 tablespoon of olive oil and honey. Drizzle or brush this mixture over the salmon fillets.
  6. Season the salmon with salt and pepper according to your taste.
  7. Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the sweet potatoes are tender and lightly golden.
  8. Once done, remove the baking sheet from the oven and let it rest for a couple of minutes.
  9. Garnish with fresh parsley if desired, and serve the oven-baked salmon and sweet potatoes hot.
