Quick lazy “pigeons” in a pot

I’m not sure why this dish was named after the bird—maybe because of the cabbage leaves (wings) wrapping the meat around in the original recipe. Anyway, this is the easier and faster version of traditional Eastern-Central European “pigeons.” This recipe is created for women who are constantly in a hurry, mothers, students who don’t have time, or girls who don’t want to stand at the pots. Preparation:
Preparation time: 30-60 min.
- Prepare meat: Put minced meat, cooked rice in a bowl, add salt and mix. Form balls of the desired size from the prepared mass.
- Prepare veggies: Grate the carrot with a beetroot grater, cut the onion into cubes, chop the cabbage.
- Add oil and half of the vegetable mass to the pot. Set the heat to medium, stir fry the vegetables for about 1-2 minutes, until they are cooked.
- Then pour a glass (approximately 220 ml) of broth
- Place the formed balls on the fried vegetables, add the remaining vegetables and pour the remaining broth.
- Cover the pot with a lid and simmer for about 30 minutes after the water boils.
- After the meal is ready, pour the liquid from the stew to a separate container (it will be used for the sauce).
- For the sauce: Add butter to the pan, melt it, add tapioca flour, then add the liquid you set aside and mix it well so that no lumps form.
- When the sauce has boiled and thickened, add tomato sauce, sour cream, mix and cook for another minute.
- Pour the boiled sauce over the meatballs and vegetables. Mix well and cook for another 1-2 minutes so that everything would soak in the sauce.⠀
