Ingredients:
Number of portions: 4
3 Handful(s)
baby spinach
1 Cup(s)
parsley
2 Cup(s)
cauliflower florets
1 Tablespoon(s)
olive or coconut oil
1/2
onion, finely chopped
1/2 Teaspoon(s)
fresh grated ginger (dried will also work)
2 Cup(s)
vegetable broth
1 Tablespoon(s)
coconut cream (skip if in WildFit Spring)
Salt and pepper to taste
Preparation:
Preparation time: 15-30 min.
- In a large soup pot, heat your preferred cooking fat over medium heat. Add diced onion and a pinch of salt, sautéing until fragrant and translucent.
- Incorporate cauliflower florets with another pinch of salt, cooking until they begin to soften.
- Pour in vegetable stock, cover, and bring to a boil. Simmer until vegetables are very tender.
- Add baby spinach, fresh parsley, grated ginger, and coconut cream. Stir briefly until greens wilt slightly, then remove from heat.
- Blend until smooth and creamy using an immersion blender or stand blender.
- Serve with a drizzle of olive oil, a swirl of coconut cream, and a sprinkle of microgreens if desired.
- Advice to enhance the recipe: Add a squeeze of lemon juice before serving to brighten flavors and aid nutrient absorption. Include a clove of minced garlic with the onions for extra flavor and health benefits. Experiment with adding turmeric for its anti-inflammatory properties and vibrant color. For added protein, consider stirring in some cooked, shredded chicken or white beans (if not strictly paleo) before serving. Garnish with toasted pumpkin seeds for a crunchy texture and boost of minerals.
