pumpkin (2 pounds whole (1 kg), less once cleaned

salt

garlic powder

Preparation:

Preparation time: 15-30 min.
  1. Preheat your oven to 220°C (425°F) and position the oven rack to the lowest setting. Line a large baking sheet with parchment paper designed for high-heat use.
  2. Begin by washing and thoroughly drying the pumpkin. To make it easier to work with, microwave it on high for one minute.
  3. Carefully cut the pumpkin in half, using a very sharp chef's knife with a sawing motion. If you wish to preserve the stem, start by slicing a small sliver from the stem side to avoid cutting through it.
  4. Use a large metal spoon to scoop out the pulp and seeds. Optionally, you can save the seeds for making roasted pumpkin seeds.
  5. With the same sharp knife and sawing motion, slice each pumpkin half into four one-inch-thick moon-shaped pieces, discarding the ends.
  6. Use a vegetable peeler to remove the skin, and then cut each pumpkin slice into 1-inch cubes.
  7. Place the pumpkin cubes in a large bowl and add olive oil, kosher salt, garlic powder, and chili powder. Thoroughly coat the pumpkin chunks either with a large spoon or by using your hands.
  8. Arrange the seasoned pumpkin cubes in a single layer on the prepared baking sheet. Roast them in the oven until they become tender, which usually takes about 30 minutes, remember to toss them halfway through the baking time.
  9. Serve your freshly baked pumpkin cubes immediately. Enjoy!
