Preparation:

- Heat the oil in a large skillet or pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and diced red bell pepper, and cook for an additional 2 minutes.
- Stir in the curry powder, ground cumin, and paprika. Cook the spices with the vegetables for about a minute to release their flavors.
- Pour in the coconut milk and fish or vegetable broth. Stir well to combine. Bring the mixture to a gentle simmer.
- Add the white fish chunks to the simmering coconut sauce. Let it cook for 5-6 minutes or until the fish is almost cooked through.
- Gently add the shrimp to the pot and cook for an additional 3-4 minutes or until the shrimp turns pink and opaque. Be careful not to overcook the seafood.
